In 1966, three brothers—Sam, Harry, and Leo—opened Georges Double Bay, a continental restaurant that quickly became a local sensation. Leo, the culinary mastermind, oversaw the kitchen, crafting dishes that delighted diners, while Sam and Harry managed the front-of-house, creating a warm and welcoming atmosphere. Georges Double Bay was more than just a restaurant—it was the embodiment of a family dream built on passion and dedication.
Years later, Leo’s son, George, joined the family business. Having been inspired by hospitality from a young age, George brought fresh energy and vision to the enterprise. He expanded the Vardis legacy, acquiring Kingsleys Australian Steakhouse on King Street in 2002, followed by several other venues.
The legacy of Georges Double Bay continues to thrive. As Leo puts it, “Honest hard work and dedication are the pillars of success in hospitality.” These values have shaped sixty years of unforgettable dining experiences.
