Our Legacy
In 1966, three brothers—Sam, Harry, and Leo—opened Georges Double Bay, a continental restaurant that quickly became a local sensation. Leo, the culinary mastermind, oversaw the kitchen, crafting dishes that delighted diners, while Sam and Harry managed the front-of-house, creating a warm and welcoming atmosphere. Georges Double Bay was more than just a restaurant—it was the embodiment of a family dream built on passion and dedication.
Years later, Leo’s son, George, joined the family business. Having been inspired by hospitality from a young age, George brought fresh energy and vision to the enterprise. He expanded the Vardis legacy, acquiring Kingsleys Australian Steakhouse on King Street in 2002, followed by several other venues
